I need to clear the air about something.
I have been scared to write anything here lately because a huge number of you have come here via the amazing Leann Brown, who has graciously recommended me.
I am extremely honored that she would do this.
In fact, I don’t know if I feel worthy of this growing audience!
I know part of the magic of substack is the recommendation network, and that people wouldn’t subscribe to this newsletter if they didn’t think they’d like it. I appreciate you giving me a try.
Nonetheless I feel inexplicably nervous about it.
OK, whew, that’s out of the way.
Vegan Spanakopita
I want to share a recipe I recently create for Mediterranean Dish. It’s pictured above and you can get the recipe it on the (free) website.
What I love about this one is it hits all the notes of a typically cheese-laden dish. White beans, a little hummus, and quite a bit of olive oil make it all possible!
The other thing I like is how easy it is. You just crumple the phyllo on top! And I think it looks pretty stellar from a presentation perspective.
Try it and tell me what you think.
Other Recent Work
Over at MyFitnessPal, I wrote an article about the rise in young people getting diagnosed with heart conditions—a topic very close to home.
It’s not doom and gloom. It includes expert advice on how to prevent heart disease. Unsurprisingly, eating more plants is top of the list!
My Second Substack
Tarot is another passion of mine, and I created a second newsletter to explore tarot topics. I call it The Tarot Memo.
Last month, I challenged myself to make as many videos as I could and you’ll find eight short videos over there now.
Plus, I have quite a few essays on the cards and themes related to them. I currently have only 27 subscribers over there so it’s a cozy and intimate space to talk tarot and even get a one-card reading from me if you tell me what you drew today in the comments :)
OK, that’s all for now. Hope you are have a gentle start to March or at least finding ways to make it more gentle on yourself.
For me, cooking always helps.
What a clever way to make the filling! I can't wait to try this
