For those of us without an Instant Pot, it turns out you can also make it in a rice cooker! 1:4 ratio of polenta to water. Last time I accidentally bought some very fine corn meal, and it still works, but more like 1:2.5 or 1:3 ratio.

I’m curious about the addition of nutritional yeast. Is that just to substitute for the cheese that is usually in a non vegan polenta recipe? I have some nutritional yeast but have never used it, so looking for ideas!

Yes. Nutritional yeast contributes a savory, umami, cheese-like flavor. You don't need it but I really like it. It's good to know you're looking for nutritional yeast ideas--I am thinking about dedicating a newsletter to the topic!
