A fantastic recipe! Beets are a great spring food to clean the accumulated gunk of winter eating out of the system. I'm going to get some today and make this!!

This feels like a really dumb question, but are marinated beets different than pickled beets?

Yes! Pickled beets would be made without oil. They'd also be soaked in a brine with a lot more vinegar, salt, and sugar. Or they would be fermented. Though marinated beets have a similar quality to pickled beets for sure, especially once you add them to a salad.
