I adore my own tofu scrambles and eat them all the time at home, but frankly I have never enjoyed one at a restaurant because everyone seems to think it needs to be drowning in turmeric. We know it's not eggs, it doesn't need to be yellow! I would love to see restaurants not only offering tofu scrambles, but learning how to make them better and more delicious!
I'm totally with you, Joy and Fran -- it's tofu scramble for the Win. You can make using whatever vegetables are in the fridge and never have to have it the same way twice. It's soft, golden (I like to add a pinch of turmeric), versatile. It's everything you love about scrambled eggs except the eggs, the chicken, the cruelty, the cost and the cholesterol.
I do miss a runny yolk on a perfect breakfast sandwich, but even my Dan is coming around to the idea of tofu instead of eggs. (He did not complain once when we had tofu in our fried rice for lunch today!) I will make us tofu scramble breakfast burritos this weekend and report back on his reaction.
OK you've convinced me :) I love tofu but can't remember the last time I made a tofu scramble (maybe never??). I have been eyeing a few recipes so I'll give one a shot soon.

It is true that restaurants don't always get them right and they can be overloaded with turmeric fo sure. Still I appreciate places trying!

Agree! I actually like more than I ever liked scrambled eggs.

Tofu scramble + beans + potatoes in a breakfast burrito is really a winning combo!
